Following convenient pickup at your Negril hotel, climb on board a comfortable tour vehicle and set off for a 2-hour drive along the scenic southern coast of Jamaica. Your destination is the Nassau Valley in St Elizabeth parish, the location of the historic Appleton Estate.
Once you arrive at the distillery, dating from 1749, embark on a 45-minute tour of the facility and the lush grounds. See the copper pot stills that are responsible for the rum's distinctive flavor. Get a peek inside the ageing house, where rum is stored in oak barrels for up to 30 years. Your guide will tell you about the distillery's prestigious history as one of the island's first rum producers. Learn some of Appleton's secret ingredients: local water that is naturally limestone-filtered, sugar cane molasses and a signature yeast culture.
Sit down for a 10-rum tasting, accompanied by a local treat: fresh-pressed cane juice. Take the opportunity to purchase some souvenir bottles to take home (some labels are only available domestically in Jamaica).
