As the sun goes down, dozens of stalls set up shop in Gianyar, located on the outskirts of Ubud. Visitors to the market are bombarded with a staggering range of dishes—chicken satay, fried bananas, spit-roasted pig and sweet cakes—served beneath bright lights to the sounds of banging pots and scraping cooking utensils.
